Today is National S’mores Day and there’s no better way to celebrate than to share these 4 easy ways to enjoy your favorite summer time treat!

S’mores Truffle Pops – No baking required!

Ingredients (Makes about 16)
2 cups semisweet chocolate chips
1/4 cup whipping cream
1 cup marshmallow creme or fluff
3/4 cup graham cracker crumbs, divided
About 16 small marshmallows
Lollipop sticks

Place chocolate chips and cream in a medium-sized bowl. Microwave for 30-second intervals until completely melted and smooth. Add marshmallow creme then stir until smooth. Gently fold in 1/2 cup graham cracker crumbs. Set aside in the refrigerator for 30 minutes until firm. Once chocolate is firm, place a spoonful in one hand. Gently press a marshmallow into the middle and then roll into a ball to cover the marshmallow. Place chocolate ball in remaining graham cracker crumbs and roll to cover. Insert a lollipop stick through the center and place on a baking sheet in the refrigerator until firm, about 15 to 30 minutes. Enjoy!

S’mores Gooey Cake Bars

Ingredients
1 package Butter Cake Mix

1 cup graham cracker crumbs
1 stick (1/2 cup) butter, melted
1 egg, lightly beaten
1 cup chocolate chips
1 jar marshmallow creme or fluff
1/2 cup cream cheese
1 egg

Preheat oven to 350°F. Place cake mix in a large bowl and remove 1 cup of mix; set aside or discard 1 cup of mix. Add 1 cup graham cracker crumbs to mix and stir until evenly distributed. Add melted butter and egg; stir until combined. Press half of the dough into a greased 8×8-inch pan. Cover with 1 cup chocolate chips. Set aside remaining dough in another small bowl.

Wipe the bowl clean and add the marshmallow creme and cream cheese; beat until smooth. Add egg and beat again. Spread mixture over chocolate chips. Take the remaining cake dough and flatten into small pieces to cover the marshmallow mixture. Bake for 30 to 40 minutes, or until top appears cooked and slightly browned. Let cool but serve slightly warm. Enjoy!

S’mores Pop Tarts

Ingredients (Makes 3 pop tarts)
1 refrigerated pie crust 
1/4 cup chocolate chips
1 tablespoon whipping cream
3 tablespoons marshmallow creme or fluff
1 egg, lightly beaten

Preheat oven to 400°F. Place chocolate and whipping cream in a small bowl. Microwave for 30 seconds or until melted; set aside. 

On a lightly floured surface, unroll pie crust and gently smooth with a rolling pin. Fold pie crust into quarters and measure a rectangle using a ruler or other straight-edged object, like lollipop sticks. Remove edges so you’re left with a rectangular pie crust. Unfold crust and refold into thirds, making a slight indentation at the folds for marking where you’ll cut. Unfold and refold in half, making another slight indentation. Cut along your folds so that you have 6 evenly-sized rectangles.  

Spread 1 tablespoon chocolate ganache and 1 tablespoon marshmallow creme onto 3 of the rectangles. Brush edges with beaten egg and cover with the remaining rectangles. Transfer to a baking sheet and use a fork to crimp the edges. Brush the top of the crust with remaining beaten egg. Bake at 400°F for 10 minutes or until slightly browned. Let it cool completely. Place remaining chocolate ganache in a Ziploc bag and snip off the end to create a small hole. Use Ziploc pastry bag to decorate tarts with zigzags or any other pattern. If ganache has hardened, soften in the microwave by warming for 10 seconds. Enjoy!

S’mores Pudding!

Ingredients
1 small package Chocolate Fudge Pudding Mix

2 cups skim milk
2 cups graham cracker crumbs
1 jar marshmallow creme or fluff
About 2 cups mini marshmallows
Four 6-ounce parfaits, ramekins, or glasses

Prepare pudding according to directions. Place 2 tablespoons graham cracker crumbs in the bottom of a parfait dish, ramekin, or glass. Cover with 1/4 cup pudding, followed by 2 spoonfuls of marshmallow creme. Top marshmallow creme with another layer of graham cracker crumbs. Place a dollop of pudding atop the creme and flatten slightly with the back of a spoon. Pile mini marshmallows in the center of the pudding. Use a torch and burn the marshmallows slightly. Repeat 3 times with other parfaits, ramekins, or glasses. Alternatively, make one large bowl of the S’mores Pudding. Enjoy!
