Hello everyone! Renee here from Two in the Kitchen! Today I’m going to share a festive recipe with you, which would best be called “fun in a bowl” or “Funfetti Birthday Cake Trifle.” If you or someone you know is celebrating a birthday soon, this recipe would be perfect and would put a smile on anyone’s face! This Funfetti Birthday Cake Trifle Recipe is made with a simple yellow boxed cake mix with a cup of funfetti sprinkles mixed in. I then made a white chocolate cream cheese frosting and white chocolate pudding to layer in between. This really is like a deconstructed cake and is a fun alternative way to make a birthday cake!

Instructions

  1. Pre-heat the oven to 350*
  2. Mix the cake batter according to package directions and stir in 1 c. of sprinkles.
  3. Bake the cake according to package directions
  4. Remove the cake from the oven and allow it to cool
  5. Meanwhile, beat the cream cheese in a large mixing bowl until smooth. Add the milk, powdered sugar, and melted white chocolate and mix until blended. Fold in the cup of cool whip and stir in the remaining 1/2 c. of sprinkles. Cover and place in the refrigerator.
  6. In a medium bowl, beat the pudding mix and milk and place in the refrigerator.
  7. Once the cake is cooled, you may begin assembling the trifle.
  8. Cut the cake up into small cubed pieces. In the bottom of the trifle dish, arrange 1 layer of cake pieces so the sprinkled colors show through.
  9. Remove the pudding and cream cheese mixture from the refrigerator. Spoon a layer of pudding over the cake pieces and spoon a layer of cream cheese mixture on top of that. Repeat the process 1 more time.
  10. Finally, arrange a layer of cake at the top, add a dollop of cool whip and top with sprinkles and a candle if desired.
  11. Refrigerate for at least an hour before serving. Store any remaining trifle covered in the refrigerator. Enjoy!
