This easy tortellini pasta salad with Greek dressing and fresh vegetables is a quick, make-ahead side dish that’s perfect for potlucks, BBQs, and summer parties.

Ingredients
1bottle Ken's Greek Dressing
1 20oz.bag refrigerated cheese tortellini
1cucumber peeledsliced and quartered
1pintcherry tomatoes halved
8oz.fresh mozzarella balls
Pepperoni slices
Parsley
Instructions
Cook tortellini in salted water according to package directions.
Drain, rinse with cool water, and add to a large serving bowl.
Pour a quarter of the dressing over the tortellini and toss to combine.
Chop veggies, herbs, and cheese.
Add the remaining salad ingredients to the pasta.
If serving the same day, pour in the remaining Greek dressing, gently toss, and refrigerate.
For the best flavor, make this recipe one day in advance to let the flavors soak into the pasta.
The next day, add the remaining dressing, serve, and enjoy.
