Tortellini Pasta Salad With Greek Dressing

This easy tortellini pasta salad with Greek dressing and fresh vegetables is a quick, make-ahead side dish that’s perfect for potlucks, BBQs, and summer parties.

Ingredients

  • 1 bottle Ken's Greek Dressing
  • 1 20 oz. bag refrigerated cheese tortellini
  • 1 cucumber peeled sliced and quartered
  • 1 pint cherry tomatoes halved
  • 8 oz. fresh mozzarella balls
  • Pepperoni slices
  • Parsley

Instructions

  • Cook tortellini in salted water according to package directions.
  • Drain, rinse with cool water, and add to a large serving bowl.
  • Pour a quarter of the dressing over the tortellini and toss to combine.
  • Chop veggies, herbs, and cheese.
  • Add the remaining salad ingredients to the pasta.
  • If serving the same day, pour in the remaining Greek dressing, gently toss, and refrigerate.
  • For the best flavor, make this recipe one day in advance to let the flavors soak into the pasta.
  • The next day, add the remaining dressing, serve, and enjoy.
